Fall is officially here which means that Uriah is in school, I’ve started decorating for fall, and I’m indulging in all things cozy. Cozy blankets, cozy sweaters, and cozy meals. And with this time of year always being on the busier side, crockpot dinners are usually my go-to. They’re easy and delicious! One of my favorite crockpot meals to cook is white chicken chili and today, I’m sharing my favorite recipe for you to recreate at home.

White Chicken Chili Recipe

White chicken chili is one of my favorite ways to warm up on a chilly fall night and with the help of my crockpot, it’s also super easy to make.

Made with chicken, diced green chilis, cream cheese, and beans, it’s not only delicious but creamy, too!

White Chicken Chili Ingredients

For my white chicken chili recipe, you’ll need:

  • 2 lb Boneless Skinless Chicken Breasts
  • 1 Yellow Onion (Diced)
  • 24 Oz Chicken Broth
  • 30 oz Northern Beans
  • 8 oz Diced Green Chiles
  • 15 oz Corn
  • A handful of Chopped Cilantro
  • 8 oz Cream Cheese
  • 1/4 Cup Half & Half
  • I tsp Italian Seasoning
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1 tsp Pepper
  • I tsp Chili Powder
  • I tsp Cumin

White Chicken Chili Instructions

  1. Add chicken breast to a crockpot with seasonings, onion, beans, chilies, corn, broth, cream cheese, and cilantro.
  2. Stir, cover, and let simmer
  3. Serve with desired toppings

My Favorite Cooking Tools & Appliances

When it comes to cooking, there are a few tools and appliances I’m always reaching for, especially for all of the cozy meals I tend to cook in the fall and winter seasons.

Salt & Pepper Holder Hate the look of the containers that salt and pepper come in from the grocery store? Me too! I grabbed this little salt and pepper holder from Amazon as a way to make the two ingredients easily accessible in a chic way. Love that I can keep this out on the counter and don’t think about it!

Porcelain Pasta BowlsPasta bowls are a game changer when eating chili and these ones from Walmart are truly the best! I love the clean edges, the size, and how tall they are.
